Preparation
  • Lightly grease a baking tray . Heat oven to 2000 C.

  • Place water and butter in a saucepan . Heat till butter melts and water is boiling . Reduce heat and add  maida all at once . Beat well until mixture leaves the sides of saucepan and forms in to a ball . Cool for 2 to 3 minutes .

  • Beat eggs lightly and add gradually to cooled paste . Add essence and beat well .

  • Place small spoonfuls of pastry on to baking  tray . Bake for 30 to 35 minutes at 2000 C or until golden brown . Cool 
    For Filling

  • Mix together Milkmaid and milk . Make a paste of cornflour in little milk .

  • Heat milk to boil . Add cornflour paste and cook over low heat , stirring constantly until custard is fairly thick . Stir in egg yolk , butter and essence . Cool , stirring occasionally to prevent a skin forming .

  • Slit the cream puffs and fill with the cooled custard . Serve .
