Green Papaya Salad
 
300 gms raw papaya peeled and shredded
7 green chillies
5 cloves garlic
2 tbsp unsalted but roasted peanuts
1 tbsp dried shrimps
6 cheery tomatoes sliced
3 tbsp lime juice
1 tbsp chopped jaggery
1 tbsp fish sauce


Preparation
  • In a bowl throw in the papaya, chillies and garlic and mix well. Divide into three portions and blend briefly, portion by portion in a mixer, taking care not to turn it into a paste.

  • You may be well off crushing it by hand. Add beans, peanuts, shrimps, tomato and mix well with the seasoning as well. Serve chilled with spring of coriander and basil.

  • This has to be served immediately before it turns soggy. Goes well with a bland chicken dish.
